How do you like your chili — mild or hot? With cheese or onions? Over pasta or rice? Or straight up?

Whether a recipe is mild, medium, hot or flammable, Posada Java manager and event organizer Mary Fisher invites home and professional cooks to enter the cook-off and have their recipe rated by five judges.

Whether the recipe is vegetarian, three-bean, no-bean, seafood, low-carb, crock pot, hot dog or white chili, anyone who has been praised for their recipe is invited to register and take part in the event on Oct. 9 in the courtyard by Posada Java.

The event has a few guidelines:

Check in and set up will start at 7 a.m.

Entrants may be in one cook, or a couple or team, and are responsible for bringing all ingredients, pots and cooking utensils and should prepare five gallons — enough for five judges plus attendees.

Chili must be cooked from scratch, on site, be kept hot and ready for judging at 11 a.m. Tables and electricity will be provided.

Proceeds go to the Green Valley Fire Corps — volunteers who perform community-service such as removing snakes and changing batteries in smoke alarms. Two Corps teams will be in the cook-off.

The winning recipe will be decided by a panel of five judges for flavor, consistency and appearance. The judges will also choose the “Best Chili Spirit Award” based on most original presentation, theme, booth set-up and appeal, Fisher said.

For one $5 fee the public is invited to join in and sample the entries. Corps members will sell tickets at the entrance to the courtyard. Water, soda and corn bread will also be for sale.

A photo of the winning cook or team will appear in “Talk of the Town” in the Green Valley News.

How to enter
Pick up a registration/entry form at Posada Java, at the entrance to La Posada, between 7 a.m. and 4 p.m. Monday through Saturday.
